Researchers at the University of Missouri are developing natural food dyes from a special variety of purple corn to replace synthetic alternatives. Common artificial colors, such as Red No. 40 and Red No. 3, are petroleum-based and serve no nutritional purpose. In contrast, purple corn is rich in anthocyanins—natural pigments found in blueberries and red cabbage—which act as antioxidants that support heart health and reduce inflammation.
The main challenge with natural food colors is their tendency to break down when exposed to heat, oxygen, or light. Since industrial food processing can reach temperatures of up to 250 degrees Fahrenheit, dyes must remain stable over long periods. During testing, about 75% of the corn color compounds remained intact after an hour of high heat. When scientists encapsulated the pigments in protective food-grade materials, retention rose to nearly 97%. This technique creates a stable powder that can be stored easily and maintains its vibrant color in acidic drinks for at least seven weeks.
Although Missouri is already a major producer of yellow corn, scientists have spent five years crossbreeding South American purple corn with local varieties. This effort aims to provide healthier ingredients for food manufacturers while offering Midwest farmers a valuable new crop to boost their income.
